pea and pomegranate guacamole

Welcome. You have officially reached guacamole nirvana, just less calorie-laden. We have substituted avocado with sweet juicy little peas, added lime, jalapeno and coriander, then studded it with jewel-like pomegranate seeds.


It’s almost too pretty to eat. Almost….

pea & pomegranate guacamole

1 bag frozen peas
1 yellow onion
1roma tomato
1jalapeño pepper
juice of 1 lime
sprigs of coriander
sea salt to taste
pomegranate seeds (optional)
To Serve:
1 piece pita bread
What to do:
1. Defrost a frozen bag of peas and mash them up in food processor, or by hand. Add to a large bowl.

2. Add the diced onion, tomato, jalapeño, lime juice, coriander, and salt and stir together until everything is mixed together well.

3. Garnish with pomegranate seeds and serve with 1 slice of pita bread.
